This is an artisan sheep's milk blue cheese made in the Pyrénées mountains, a region of the French Basque country where the wildflowers and fresh grass give the milk its complexity, subtlety, and lightness. Bleu des Basques has a wonderful combination of earthy spiciness and hints of apricot.
Strangely, this cheese is a sheeps milk cheese (which sweats a bit when completely warm) and also it's a creamy blue cheese. It's perhaps the first time Ive had the two simultaneously. I love it!
