I noticed this striking cheese behind a cheese counter as it contrasted nicely from the black wax rind. The monger offered a taste, and it did indeed taste of beer. That flavor mellows nicely to a point of just a beautiful cheese after the 2nd or 3rd bite.

This is a raw mil, farmstead cheese with the addition of Duval Triple Hop, directly to the cheese vat. Perhaps the dark rind is a nod to what they say this cheese is best paired with: "dark abbey or abbey styled beer beer or dry fruit beers."
