Capriole is an Indiana goat creamery that pioneered artisan cheese making in its region over 25 years ago, and renowned cheese-maker, Judy Schad, now has a herd of more than 500 goats. Actually this aged goat cheese is named after a special intern, a young Hungarian woman named Julianna Sedli. Sedli had the insight to make a small version of their Tomme and also rolling the cheese in herbes de Provence.
I almost missed my first chance to paint a cheese from Indiana as this small quarter of a wheel wedge was all that was left by the time I arrived in the cheese shop. After tasting a sliver off the wedge, I decided then it was worthy of a double portrait. The dramatic "formal wear" background lends to the mirror-imaged portraits that reminded me of a bow tie. That was inspired by the flavor and consistency of this cheese is beautifully elegant and classy.
