Sternschnuppe

"Sternschnuppe" is German for "shooting star" and it's from Käsküche Isny, in the Allagau region of the Bavarian Alps. As it's aged for three or more, it's brushed with red wine and herbs. The cheese paste itself is firm and and a perfect store of flavors, in my opinion. It tastes of caramel, without being sweet. It has a nutty and savory flavor similar to an aged gruyere and at the same time buttery and meaty layers come out. This is a rather complex flavor experience, to say the least.
