St Stephen

This heavenly triple cream cheese is crafted in Stephentown, NY by an artisan creamery named "Four Fat Fowl". The name refers to a history of the area being a Dutch colonized community in the Hudson Valley and the last "Patroon", being a landholder named Stephen van Rensselaer. Stephentown was named after him; he was considered a lenient landlord because he allowed tenants who had been there for seven years or more pay rent of "four fat fowl", a day's labor and ten to twenty bushels of wheat per hundred acres. The creamery, understandably, couldn't resist using part of this colorful history when choosing their name.
St Stephen the cheese is silky creamy and has a taste of freshness and happiness all at once. The lactic flavor has a buoyancy (not sure that's really appropriate a term for a flavor) that is bright, light and requires considerable will power to restrain from eating a whole wheel all at one sitting!
