This is a beautiful blue cheese has been made from pasteurized cow's milk in the village of Beauzac, in the French region of Auvergne since 1988. It's super creamy and buttery with the leaning towards tangy which keeps it just shy of sweet... but definitely a wonderful spicy kick while safely mellow to my tongue.

I had the pleasure of painting this for a commission and how I missed painting blue! Also, the foil was fun too.

This cheese is a great option for those seeking out vegetarian rennet cheese.
