This cheese portrait was a commission for the importer Forever Cheese Co. They gave me a huge 65 lb wheel of it and I ended up painting it pretty much life size! What you see is the accumulation of about 12 hours of work.

This Pecorino DOP from the Roman region has a higher butterfat that comes from whole sheeps milk instead of skim. The result of the fat is a softer, less salty and more rich paste. It's an unbelievably wonderful cheese to eat alone but magical on pasta or salad.
