Considered by some the "Prince of Gruyeres" this Alpine classic known back in the Roman times, is produced in the Beaufortain, Tarentaise and Maurienne valleys located in the Savoie region of France. The large 85-pound wheels are the result of cows feasting on lush meadows of flowers and grass all summer. It's cast into beechwood hoop molds, creating the curved concave rind before aged between 6- 12 months but sometime even longer in cool mountain cellars.

I was so grateful to be commissioned to paint this classic raw milk cheese that's absolutely delicious. I love the quality Gruyeres my work gives me access to but this one is the most mellow I've had so far. This firm cheese has a brothy - savory flavor with incredibly gratifying soft but firm texture that any quality Gruyere would have.
