It is an incredible privilege to have the opportunity to paint a whole wheel of this world renowned king of Cheddars. This commission was made possible thanks to the help of Neal's Yard Dairy, who exports this stellar cheese and Di Bruno Brothers in Philadelphia who sells it in my home town. Much of my cheese-painting career wouldn't be possible without them.

I am fortunate to have met James Montgomery, the maker and perfect ambassador for Somerset Cheese , on Cheese Journeys trips. He's extremely generous with his time and sharing knowledge. And his a champion story teller. Touring his facilities, especially the cheese cave where these 55 lb clothbound wheels are aged, is one of my favorite cheese memories. You really fall in love with that rind when you are aware of the nature of it's aging. It made my studio smell wonderfully like the cave it came from, after having just been there overnight.

This is among my favorite cheeses in the world and I cant wait to eat and paint it even more!
