From the Cheese Portraits series.
I am so happy to have picked up this tasty wedge of aged goat Tomme from another Pennsylvania maker. This was the first I've painted from Linden Dale Farm, in Lancaster, PA. The Mellingers run this family business, a 7th generation goat dairy farm, producing milk, yogurt, cheese and caramel among other products.
This traditional farmstead hard goat cheese is a mild, earthy Tomme with a natural rind. There's a balance of nutty and the slightest sharpness. The beauty of the raw milk and cave aging for 8-12 months adds all the flavor one can savor with delight.
