This is a sheeps milk cheese from Emila Romagna Italy.
Another incredible cheese I found at Di Bruno Bros shop. Here's what their label says: "...this one is bathed in two staples of it's local cuisine, rubbed with balsalmic vinegar and juniper berries, the typical nuttiness and meaty overtones of the pecorino are enhanced by sweetness and balsamy, herbaceous flavors"
Did you see that? MEATY!
I so love this cheese. The Balsalmic gives it this great red glow along the inside of the rind that puts hearts in my eyes.
