This Danish blue cheese comes in an unusual pentagonal shaped wheel with a rind that looks almost black at times. Mine started turning slightly whiter after I brought it home, which only added to a curious texture which was fun to paint. It's made with both sheep's and cow's milk.
I also had the fortune of visiting the cheese shop "wedge + fig" in Philly, who were very accommodating and they just so happened to cut it just along the spiked lines of blue mold.
Unlike most blues, this one is mellow, buttery and with little bite. It's creamy and delicious enough to eat too much, too quickly.
