Shropshire Blue - made by the Colston Bassett Dairy who are famous for their stilton in the UK. "Shropshire blue has a lovely creamy texture and slightly more mellow flavour than stilton. The orange colour is from the addition of annatto - a natural vegetable dye."

I've enjoyed painting blues but this one was a surprising challenge that wouldn't let me step away from it. The saturated yellow-orange was very subtle in color changes. There's a variety of yellow greens and browns I had to feel out in order to capture the changes in the terrain. Then I suspect I was chasing it; adjusting constantly as the color deepened from becoming room temperature.
It all paid off with eating it. Oh, this cheese is beautiful to eat.
