Perlitta is a tasty Jersey cow milk cheese, aged farmhouse gouda styled cheese for 23 months in a 4-5 lb wheel. Deep caramel tones and aroma that can only be reached after almost two years in the cave. I love that the final flavor impact is one of almost a smokey bacon. I bought this at Valley Shepherd Creamery's new farmstand in Reading Terminal Market, in Philadelphia. Their cheeses are really attractive. I painted this with the cheese in shadow but allowing some light to glow through the "eyes" (holes) and still allow some view of the natural rind.
