Teamed with dutch cheese makers, Marieke of Wisconsin, introduces a traditional Dutch flavor of the northern province of Friesland in the Netherlands to the American market. It's my first Wisconsin cheese portrait and it was a challenge due to the nature of Gouda. It's translucent, craggy, crystallized in areas and flaky even.
